This space has been incredibly quiet since our toes sunk into the sand of beautiful Okinawa! It’s been a month and a half. 6 weeks since our world was tipped on its side. My mind is still fighting with my heart that this is reality, that she won’t be removed from our home again. But it’s real, we have a daughter now, the court ruled in our favor and we are officially a family of 5. God has rescued and redeemed and I am in awe of what He has done. He showed us in no other terms that this was by His hand.
It would seem that all we do these days is hike and eat great food! And for the most part that is true. We are counting down the days to summer, a June court date, our move to Japan and a million other things. In the mean time we are trying to take advantage of a yet to be packed kitchen and the chance to still explore this little area of North Carolina which is resulting in a food and travel heavy blog!
This salad is something I make weekly during warmer months and it’s a great way to get fresh veggies on our plates. It makes a bright display on a potluck table and packs easily on our hiking trips. The bonus is that I can offer you a vegan/plant based version too! An all around winner if you ask me!
I have this dream that we will hike the AT in its entirety one day. It’s far fetched I know, but who knows! Until then we are working hard to make sure the kids catch the hiking bug. I read them stories about the trail, show them maps, talk it up like it’s on everyone’s bucket list!
I could talk y’all’s ears off about our move, or what has been going on with DSS, or how my right eye wont stop twitching…..but I’m tired and kinda talked out.
So can we just think about pie? Pie is so friendly, it says “here, come sit down with a cup of coffee and rest a moment.” It doesn’t require endless paperwork or ask you to make life decisions. I really really like pie these days….haven’t a clue why….
Weekends are our chance to explore and adventure with this little crew and Bill and I are always on the lookout for nearby places to explore. When this hidden gem presented itself we knew that it was the perfect spot for a weekend getaway! Even more so it was exactly where I wanted to spend my Mother’s Day, unplugged from everything, salt air in my lungs while watching my boys discover another corner of this amazing world we live in. It’s been a wild month since I’ve last logged in. We’ve road-tripped to Texas and back, saw both sets of family, said goodbye to our sweet Dora pup, welcomed a 4 day old baby into our home for a short respite, hiked part of the Appalachian Trail, landed myself in the ER for a bug bite that made my face swell to the point of being unrecognizable, and divided up our household items in preparation for our move across the world….and it’s only been a month y’all!
Last night our youngest, Jack Attack, our wild, adventure seeking, big-hearted, giant of a 7 year old came downstairs after bedtime with tears pouring down his cheeks. He flung himself across my lap and sobbed heavily into my chest.
Every once in awhile I will pop in to share a product or two with ya’ll! What I can promise with this is that it is loved by the whole family and not just a promotional post.
