Toasted Granola

Y’all, I could enjoy a cheese board at any hour of the day but I know not everyone shares my love of cheese so deeply. So when this month’s Ko Creative events booked up with more brunch timeslots than evening bookings, I knew I needed to freshen up a menu that was more “morning” appropriate.

Enter the Yogurt Board! Just as gorgeous as a cheese board but people won’t stare in shock as you enjoy a loaded bowl of yogurt with your coffee like they would 10am goat cheese with truffle oil and fig jam….

The main idea is to dream up all the delicious toppings you might put on yogurt, plate it up pretty, and serve it alongside some creamy vanilla yogurt.

BUT, and I’m going to be bossy here, these boards NEED an allstar granola. Drumroll please…..

Here she is y’all, the most amazing granola you will ever eat! I’ve tried a lot over the years and I can promise you, this is the ONE that I get asked to share.

It makes a big batch that is perfect for sharing as gifts and stores great in an airtight container for a month in your pantry! It won’t last that long though 😉

Toasted Granola

  • 3 cups Bob’s Red Mill Gluten Free Oatmeal
  • 1 cup roasted/salted pumpkin seeds (I use the Rivertrails Food brand found at our commissary)
  • 1 cup roasted/salted sunflower seeds (Rivertrails Food brand)
  • 1/2 cup pine nuts
  • 1 cup Bob’s Red Mill Unsweetened Flaked Coconut
  • 1 1/4 cups chopped raw pecans or almonds
  • 3/4 cup pure maple syrup
  • 1/2 cup extra-virgin olive oil
  • 1/2 cup packed dark brown sugar
  • 1/2 teaspoon pink himalayan sea salt
  • 1/2 teaspoon vanilla extract


Preheat the oven to 300º

In a medium bowl mix the syrup, olive oil, brown sugar and sea salt together, allowing the sugar to dissolve into the liquids.

In a large bowl mix together all the dry ingredients, pour the liquid mixture over it and stir to combine.

Spread the granola out on a large baking sheet and pop it in the oven. Follow the bake/stir/bake routine below:

300º 15 minutes bake – stir pan – 15 minutes bake – stir pan – 15 minutes bake – stir pan (45 minute bake time)

Then reduce the oven temp to 250º and do the following:

250º 10 minutes bake – stir pan – 10 minutes bake – stir pan (20 minute bake time)

Total Bake Time: 65 minutes

Allow the granola to cool completly and then store in an airtight container
